Nose
The nose is quite friendly, mainly on butter, shortbread, fennel seed, burlap, apricot and peach. There is a slight mineral and citric background.
Mouth/Palate
It's not as friendly as on the nose. The oily side is overpowered by some roughness, either from the spirit or (what I presume) from the cask. The malty, bready and dough-like nose (danish pastry) is continued, but this whiskey is rather spicy on ginger, pepper, cocoa and nutmeg.
Finish
Stays rather long, with the spiciness decreasing a bit now. The fruity side has mostly gone (still some apricot and orange) to make room for more herbs and malt. Sage and fennel seed, hemp rope, rye bread. The oak gives rather friendly wood notes, together with ginger.
